Potato Cheddar Soup

POTATO CHEDDAR SOUP
4-5 stalks celery, chopped
2-3 carrots, grated
1 medium onion, chopped
1 Tbls. butter
2 cans chicken broth
3 cans cream of potato soup
1-1/2 c. shredded cheddar cheese
8oz. sour cream
salt & pepper to taste

In large sauce pan, melt butter and saute veggies about 10 minutes. Add chicken broth and simmer low for 20 minutes.
Add potato soup, cheese and sour cream. Cook on med. heat for 15-20 minutes. Finish with salt & pepper.

I love this recipe. We have already had this cool fall season. It was given to be by my wonderful friend Laura.

Yum-o!! we've already had a big 'ol pot of this too:) I put a new "twist" on it this year, and made it Loaded Baked Potato soup...just add a bag of real bacon bits from the refridge. section. Makes it sooo good!
