Carrot Cake

Ingredients: 
2 c. flour
1 tsp. baking powder
1 tsp. gound cinnamon
1 c. cooking oil
2 c. sugar
1 tsp. baing soda
3 c. finely shredded carrots
4 eggs

Directions:
In large mixing bowl combine flour, sugar, baking powder, baking soda, and cinnamon.  Add carrots, oil and eggs.  Beat with an electric mixer till combined.  Pour batter into greased ad lightly floured pan.  Bake at 350 degrees for 35-40 minutes. 

Cream Cheese Frosting
Beat together two 3 oz. pkgs. of ceam cheese, softened; 1/2 c. butter, softened; and 2 tsp. vanilla till light and fluffy.  Grandually add 2 c. sifted powdered sugar, beating well.  Gradually beat in 2 1/2 to 2 3/4 c. additional sifted powdered sugar to reach spreading consistency.

This sounds good! I have never made a carrot cake. Thanks! Excited for everyone that the wait is almost over. Mark & Shannon didn't know with the second one, it made the delivery even more emotional & special :-)

I made it today & it is really good!!! Guess I am the only one in the county that hadn't tried a carrot cake! Thanks again!
